What a surprise to see tweets about the new Modernist cuisine at home which will be available for sale in October and is available for pre-order already! Interestingly this book is not an extract for food enthusiasts of the 2400-page Modernist cuisine. Rather, it’s a new book focusing on equipment available to enthusiasts (sous vide is included, but no rotary evaporators or centrifuges), techniques and recipes. There are more than 400 recipes, all of which are new. The printing quality is the same as in Modernist cuisine, so while you’ll think twice before turning the pages with greasy fingers it’s a good thing that the single volume is accompanied by a spiral bound kitchen manual on washable paper!

Great news! I would love to have Modernist Cuisine in my collection but obviously the price is an obstacle. Even if they made one half as expensive, I would buy it. I hope this is even more affordable.
The current Amazon price is $115.
Yay — it’s about time. The main reason I didn’t buy the original modernist cuisine was not the cost, but the disappointment I would feel when most of the recipes wouldn’t be accessible to me (even with a very well equipped kitchen). Hopefully, the “at home” version will be something I can really put to use.
By the way, I love your blog!
I bought the french version of Modernist Cuisine (I). It has bugs in it but nevertheless it’s worth the money!
It’s not up to me to convince you, but just go to a shop and you will see what I mean if you are a passionate food lover.
Time will prove this is a historical book!
Wrong Martin, the price is $140, but is still well within price range for chefs or foodies who buy cookbooks or similar reference items.
